DIY: Christmas Card Ring

One of our favorite things about the holidays is receiving Christmas cards from all of our friends and family! But alas, December 25th passes and we have to take all the pictures down at some point. So, in order to deal with our post Christmas blues and be able to still see the smiling faces of all our favorite people, we found a reasonable way to keep our Christmas cards out all year long! Sadly the decorations and lights do still have to get put up…

Those of you who know me well know that I am NOT a crafter. Case & point why I have a Pinterest board named, “If Only Someone Would DIY for Me.” (Praise the Lord for Etsy!) But this simple craft takes two steps…even I can do that!

Step 1:

Using a hole puncher, we make holes in the top left corner of each of our Christmas cards. They usually lay most flat if you group together the horizontal cards in a row and the vertical cards in a row.

Step 2:

Using a large metal ring, we clip all of our cards together in a neat, solidified little pack. Ta-Da! Now we no longer have our fridge and wall covered in pictures, but we still have our precious friends and family close at hand. Bonus: we get to keep at least a little bit of Christmas cheer in our house year round!

The most meaningful part of this little craft is that it gives an organized way to be praying for the people we love the most all throughout the year. We keep our ring of Christmas cards at the kitchen table and each night at dinner, the kids get to flip over the card from the day before and pray for a new family. We want the value of prayer to be strong in our family and we want our kids to see the importance of lifting others up to the Lord. Noah and Cole get so excited to see who the new family is going to be when we flip to the next card (and they especially love when they get to pray for a family with their pet in the photo!)

We hope this will be a fun way for you to incorporate prayer more into your family’s routine and keep close at heart the people dearest to you that you might not get to see as often as you wish.

  1. Not Your Mother’s Clean Freak Refreshing Dry Shampoo

No fit girl should be without dry shampoo (for those days when you need to get one more day out of your hair without washing!) But this one is from Not Your Mother’s not only works better than any other brand I’ve used, it’s also the most budget-friendly! You can find this can for under $5 at Target. (Expect to pay double at Ulta & Amazon!) It smells super fresh, and it won’t leave white powder in your hair, so for my dark-haired friends, you can use this one too!

2. fitbook’s fitspiration journal for Target

I’m an old fashioned pen & paper girl when it comes to tracking my workouts…but based on my anorexic history, I don’t like just tracking my calories in & calories out. This journal, available at Target, made by my friends at fitbook, has you track your gratitude, health goals, appreciation for your body, workout duration, energy levels & today’s mood. Not to mention, it’s sprinkled with inspiration & fit tips. Run to Target & grab one for the new year!

3. The DayDesigner & Power Sheets

Speaking of pen & paper, here are two of my other favorite tools for goal-setting and organizing my day. I know these aren’t 100% fitness related, but I rarely meet other #fitgirls that don’t have laser focus in other areas of their life too. My DayDesigner planner does exactly what it claims in the title – it helps me design my day. From an hourly breakdown to prepping for a week in advance, this planner has helped me stay organized more than any other tool I’ve ever used. And for the Type A+ personality, if the #fitgirl in your life also has a professional life, don’t let her go another day without these Power Sheets! They are fantastic for taking the vision God has given you from concept to action steps. But don’t delay – they’re only available a few times a year, and you’ll wish you had started today!

4. Beachbody on Demand & AppleTV

I love working out in my home gym, and even though I’ve worked in the fitness industry for over 10 years, I still prefer working out to a DVD! (Who wants to exert the kind of brain power to come up with their own workout at 5am?!) But let’s be real – that can get old & I have two boys that are great at losing things and breaking things. This year, Beachbody on Demand in conjunction with my appleTV has been an AWESOME addition to my morning routine! Not only do I never get bored with an ever-growing library of Beachbody’s most popular workouts, but there’s even workouts ONLY designed for Beacbody on Demand members! At $39.95 quarter (about $2.50/week), you can’t beat that. It’s like fitness Netflix! 5. Essential Oils

Again, I’m not an essential oils expert by any stretch of the means, but I love finding natural ways to help with common ailments. Instead of popping Tylonol when I get a headache, I love rubbing this PastTense tension blend from Doterra on my temples. (It’s a little pricey, but it does last, and most importantly, it does work!) Also, Young Living has a lot of great blends, but my favorites are their blends, specially formulated for kids, so they’re already diluted. Pictured here are the three I use the most for my boys: tummyGize (for tummy aches); SleepyIze (for aiding going to sleep & staying asleep); and Owie (will make scrapes & cuts disappear in about 48 hours!)

6. Body Butter

I lift weights, but I don’t want man hands. Not to mention, this time of year, our skin tends to dry out, especially if you live in a place with humid temperatures in the warmer months. I’m a big fan of body butter, as well as staying away from chemicals. (And yes, I’m a big fan of Coconut Oil, but I typically only use that at night!) Body butter is my go-to first thing in the morning and during the day. Trader Joe’s has the best price, coming in at $3, for a pretty large tub. So far, I’m a big fan of their Coconut scented, but the pumpkin body butter has been fun to mix in during the holiday months!

7. Cloth Ponytail Holders

No one likes creases after having their hair up in a ponytail, right? These cloth ponytail holders are the only ones I’ve ever used that allow me to pull my hair down, spray with dry shampoo, and not have dents in my hair. (If you have long hair, you know exactly what I mean!) Buy these neutrals in a bundle at Target for under $5!

8. it! costmetics

I’m in no shape or form a beauty or make-up expert…but I know what I like, and I know what doesn’t make my skin break out. I’m all for make-up that only needs to be applied once a day (with the exception of lip gloss, of course), and can hang with a little sweat. I may not always have make-up on during my workouts, but I remain fairly active throughout the day…and this is the only make-up I’ve found that can hang with my activity level AND doesn’t contain harmful, break-out inducing chemicals. If you haven’t tried it! cosmetics yet, head to their website or your local ULTA Beauty Supply to give them a try. Thanks, Coach Glitter, for introducing me!

Michelle’s Holiday Hustle Workout

If you’ve been following me, you know that this year, I decided to leave the “hustle” of the Christmas season for my home gym only. Christmas isn’t supposed to be so busy that we end up ignoring the very reason the holiday exists. Yet with all the activities going on this time of year, that can easily happen if we aren’t intentional to make time for Jesus.

So knowing that time is scarce & treats are plenty, I put together a few of my favorite moves from my Beachbody on Demand exclusive workouts. Iron Sharpens Iron: Abby Veigel

If you look up determination, you should see Abby Veigel’s face. From the first time we talked, I knew she was going to be a difference-maker. She inspires me daily. She is a woman who doesn’t forget health is a blessing. She is a woman who takes being a role model for her daughters seriously. Bottom line: she cares about what matters. She priorities people. You’ll be better for knowing her story & connecting with her. I’m grateful for you, Abby!

Here’s Abby’s story in her own words:

Up until about 7 years ago, my main focus in life was when my next meal was going to be and what it was going to be. Would it be enough to fill the void in my heart? Would it be enough to make me forget about how I was feeling inside? The thought of working out never crossed my mind. It wasn’t until God made me a mother for the first time that my heart and mind were opened to the fact that there is more to life than just living meal to meal.

I realized that to give my new daughter the life that she deserved, mine needed to change.

Being a 300 lb. Mom was not going to give me the energy needed to keep up with an active child. For the first year of her life, she would sit on the floor in front of the television while I ate frozen pizzas. I am so glad that shortly thereafter I had my “AHA” moment, and decided enough was enough.

I am the daughter of a marathon runner, so when I realized I needed to exercise, I did all that I had ever known. I laced up my tennis shoes and I headed out the door. I think I made it 15 seconds that first run until I had to walk, but I was determined. Slowly but surely, I was able to run longer than I needed to walk and eventually completed my first 5k. Within that first year of running and watching what I ate, I was able to lose 100+ lbs. I gained most of it back with my second pregnancy, but I was determined once again. I lost the 100+ lbs for the second time and I have been able to keep it off ever since.

Running allowed me to lose the weight but I quickly hit a plateau and realized that I was missing a major component in my fitness, strength training. As part of God’s plan, this I’m sure of, I came across a blog written by Michelle Myers. I couldn’t believe what I was seeing, a woman who was not only strong physically, but her faith in the Lord was even stronger. I felt God tugging at my heart to contact her and oh am I glad that I did. We chatted on the phone quickly and she knew right away that Les Mills Pump would be the perfect companion workout to my running.

I was instantly hooked on the fact that I could workout in the comfort of my own home and not in front of strangers at the gym. Shakeology provided me with the nutrition that I didn’t even know I was missing in my diet. The digestive issues that I had struggled with for years were gone within 2 months of starting to drink it daily. It provided me with the energy that I needed to chase after my 2 young daughters. To sum it up, I was hooked.

Michelle not only provided me helpful information for my physical health, but she also brought to my attention that I had a story to share. Before this, I had no idea what a Beachbody coach was and the idea of sharing my weight loss wasn’t something that I had even thought about it. Sure, my friends and family had noticed, but sharing it with the world of social media? No way. However, It didn’t take long before the idea of becoming a coach and helping others who were feeling like I had once felt seemed like it was meant to be. I signed up that day to become a coach and quickly got started on my Beachbody journey.

It took me a whole year of drinking Shakeology and doing the workouts before I even looked into what my “coaching status” even entailed. I joined one of Michelle’s “Getting Started” groups and from then on, my life changed again. I had a bigger purpose in life. I had an avenue to help women who were struggling. God was bringing purpose to my previous pain. The group led me to a new group of women, spiritually strong and driven women.

Being a Beachbody coach gave me the confidence to start a brand new life for myself. I would have never dreamed that I would ever run my own business, but I am now the proud of owner of Abby Veigel Wellness. A business that provides me an opportunity to help women who are where I once was. Overweight, depressed, anxious, and alone, with no idea of how to change.

For me, it’s not about how much I can sell or what rank I am in the company. For me, it’s about seeing a confident smile on a woman who hasn’t smiled in years. It’s about crossing the finish line with a woman who never believed she could run a mile. It’s hearing a woman say she loves herself again.

Michelle has not only been a business mentor, but she led me back to the Lord. I was raised in a Christian home, but just like everything else, my faith took a back seat to my depression. Being able to be a part of Michelle’s “world” on a daily basis was a constant reminder of how much I missed my relationship with God. She inspired me to start every day with devotion time and it wasn’t long until I made the decision to accept Jesus as my personal Lord and Savior.

Being a part of Michelle’s community, “Team Iron,” is exactly what her team name stands for. Iron sharpens Iron. This group of fitness loving, spiritually strong, supportive women gives me the inspiration, motivation, and confidence that I sometimes lack. Michelle has taught me to not be ashamed of my faith. It’s okay to love fitness and Jesus, it doesn’t make you a freak.

It’s my hope and prayer that every woman who is where I was once, finds their way out. If you are a brand new coach, I hope that you always remember the impact that you are able to have on someone’s life. It’s more than helping a person lose weight or look better in a swimsuit. You have the ability to let their light shine again!

My mission statement as a coach is to “empower those who are lost through holistic health, nutrition, and fitness, so they may let their light shine again!” My life verse has become Hebrews 12:1-2, “and let us run with perseverance the race God has set before us. We do this by keeping our eyes on Jesus, the champion who initiates and perfects our faith.”

So that’s what I leave you with today. To feel your best, ensure His light is shining through you.

The Giving Manger

The Christmas season is one of our favorite times of the year! We love the music, the colors, the festivities, and we start watching Christmas movies about halfway through October! Every family has their favorite traditions and this year I am looking forward to beginning a new tradition in our home that will be special for years to come. When a box from The Giving Manger arrived on our front door step, I couldn’t wait to open the cute little package and share what was inside with my boys!

It is all too easy for the Christmas season to be a time where we are self-absorbed, focusing so much on our own desires that we forget to look around us and realize the needs of others. It is ironic to see what Christmas has become when we remember its true purpose. Christmas is meant to be a day of celebration! Not a celebration of new toys and gadgets and gifts, but the celebration of our Savior. Our Savior, who though one with God, humbled Himself to be born in the modest form of a small baby in a dirty, smelly manger. With the world constantly telling us that Christmas is all about us, I am excited to use The Giving Manger to show my boys one of the sweetest things Jesus demonstrated to us in his birth: Humility.

The Giving Manger is the story of a family who comes together as they learn to put one another’s needs before their own. In the book, the father implements a new family tradition of serving one another over giving gifts. While the kids are not thrilled about this initially, throughout the book we see hearts become tender and lives change as a result of humility growing in their home. Also included with the book The Giving Manger are three simple things: a manger, a small bundle of straw, and a wooden baby Jesus. And this is where our new family tradition comes in.

Every time someone in our family takes the time to serve someone else, they get to add a piece of straw to the manger, preparing for the birth of baby Jesus. I am excited to see how this will help our family see service more and more as a joy instead of a chore! We’re looking forward to the sweet conversations and moments with Noah and Cole that might be sparked by these small acts of kindness along the way. When Christmas Day finally arrives and we get to place Jesus in the manger, I know we’ll have many heartfelt memories of loving one another well throughout the Christmas season that we will treasure forever!

To reinforce the idea even more, I even bought a set for my son’s preschool class. I can’t wait to hear stories of how he and his friends serve one another & their teachers, aiming to outdo one another in love (Romans 12:10).

Sweet Potato, Black Bean & Kale Quesadillas

In the Myers home, we love food that doesn’t require utensils, which makes these hearty quesadillas so much fun to eat! This vegetarian recipe from Cookie Monster Cooking is packed with flavor and nutrients that always fill us up.  I love cooking with color and the bright orange and green ingredients never leave me lacking. We enjoy topping ours off with fresh guacamole or salsa. Quesadilla night is always a favorite, and Noah is never sad to be sent to school the next day with leftovers in his lunchbox.

Enjoy!

You will need:

  • 3 medium sweet potatoes
  • ¾ teaspoon salt, divided
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon oregano
  • ½ tablespoon olive oil
  • 3 cups chopped kale
  • 3 green onions, thinly sliced
  • 1 can black beans, drained and rinsed
  • 8 to 10 large flour tortillas
  • 2 to 2 ½ cups cheddar cheese (We use Daiya as a vegan cheese alternative)

[Bonus: the boys don’t seem to notice or be deterred by the kale at all!]

Instructions:

  1. Slice your sweet potatoes in 1/2 inch slices. We like to peel them first, but you can leave the skin depending on your preference.
  2. Add sweet potato slices to a large saucepan with enough water to cover the potatoes and a ½ teaspoon of salt. With the heat on high, bring the water to a boil. Once it reaches a boil, reduce the heat to medium and simmer for about 15 minutes, until the potatoes are tender.
  3. Drain the potatoes and put them into a large bowl to mash them using a potato masher or fork. Mix in the remaining ¼ teaspoon salt, cumin, chili powder, and oregano until combined well.
  4. In a medium skillet, heat the olive oil over medium heat and add in the kale and green onions. Cook for about 2 to 3 minutes, until the kale is bright green and tender.
  5. Add the kale and green onions to the bowl with the mashed sweet potatoes, then mix in the black beans and mix well.
  6. Place the tortillas on a work surface. Using a spatula or fork, smear about ⅓ to ½ cup of the filling on half of the tortilla. Top with about ¼ cup of cheese or vegan cheese substitute (or to taste). Then, fold the tortilla in half creating a semicircle. Repeat this process with remaining tortillas.
  7. To save unnecessary clean up, wipe out the skillet you used for the kale to grill the quesadillas. Once the pan gets hot, spray lightly with nonstick cooking spray. Place the folded quesadilla in the pan and cook, flipping once halfway through. You’ll know your quesadilla is ready to eat when both sides are browned and the cheese is melted! Cut into triangles and serve with guacamole or a topping of your choice! Enjoy!

Vegan Sweet Potato Biscuits

This delicious vegan biscuit recipe from Pickles and Honey is perfect for breakfast, lunch, and dinner! In the morning, they taste great with turkey sausage in the middle for that yummy combination of sweet and spicy. When it comes to dinner, we usually save them for last as dessert! We spread a little coconut oil on top and the boys love to have theirs with some peanut butter, too. Versatility and room for creativity is always an added bonus!

I typically use gluten-free all-purpose flour or whole wheat pastry flour, depending on which one I have in my pantry when I make them, and we buy our coconut sugar at the Earth Fare nearby. I usually purée the sweet potatoes at home using the pre-cut, cubed sweet potatoes from the store, steaming them in the microwave, and then blending them in our blender. (In case you haven’t noticed, I like to cut time in the kitchen however possible!)

You will need:

  • ⅓ cup non-dairy milk (We use Vanilla Almond or Vanilla Cashew milk)
  • 1 tsp. apple cider vinegar
  • 2 cups gluten-free, all-purpose flour (Or whole wheat pastry flour)
  • 1 tbsp. baking powder
  • 1 tsp. fine grain sea salt
  • 2 tbsp. coconut sugar
  • ¾ cup sweet potato purée
  • 2 tbsp. melted virgin coconut oil + extra for brushing the biscuits

Instructions:

  1. Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper and set it aside.
  2. In a small bowl, whisk together the non-dairy milk and apple cider vinegar to make vegan buttermilk and let it sit for 3-5 minutes to curdle.
  3. In a large mixing bowl, sift together the flour, baking powder, and salt. Mix in the coconut sugar.
  4. In a separate bowl, stir together the sweet potato purée and melted coconut oil, being sure that the coconut oil is no longer hot. Next, stir in the non-dairy milk and vinegar mixture.
  5. Make a hole in the center of your flour and pour the sweet potato mixture into the center. Mix until a dough starts to form.
  6. Line your counter with a piece of parchment paper dusted with flour. After moving your dough to the counter, knead it a a few more times, being careful not to over-mix the dough so it doesn’t become tough. If your dough is too sticky, sprinkle on a little more flour.
  7. To create the thick biscuits every one loves, use your hands to press the dough into a 1-inch thick round. Cut the biscuits using a biscuit cutter or the end of a glass and place each on your baking sheet, then brush the tops of the dough with melted coconut oil.
  8. Bake for 12-15 minutes until the tops are golden brown. A toothpick inserted into the center should come out clean. Allow the biscuits to cool for 5 minutes before serving. Enjoy!

Iron Sharpens Iron: Caren Kamel

Iron Sharpens Iron: Meet Somer Phoebus

You know when you are new to a city and you meet your first friend? That’s what happened to me when I met Somer almost ten years ago. I was brand new to Fort Worth, Texas, and her dad was actually my boss at Southwestern Seminary. Somer and I were fast friends. We didn’t get a ton of time together, as she had two small kids, a full-time job, and a husband in seminary. But I tucked her away in my brain, and knew if we ever had time together, we would be soul sisters.

Thankfully, we ended up getting that time, and I couldn’t be more proud of the soldier for Christ, wife, mother, friend, ministry leader and business woman you are, Somer!

Here’s Somer’s story:

Before joining Michelle’s challenge group, I was overweight and terribly out of shape, but only in my 20’s. I wanted to do better and be better for my two daughters and my husband. I was intimidated by gyms, so I decided to give Turbo Jam a try in the privacy of my own home. I fell in love! I learned what clean eating was, became a Shakeology addict, and the rest is history! I lost 40 pounds, and it has never come back.

I grew up in a family that loved the Lord. I was a pastor’s daughter and was blessed to understand the truth and have the gospel shared with me at a young age. Without Jesus, I have nothing! He is my rock!

I had met Michelle at Southwestern Seminary in Fort Worth, Texas and I was first introduced to Beachbody when she reached out to me through a Facebook message. Talking to her was the first I had heard of it.

When I signed up to be a coach, I had no idea what I was getting into so I didn’t have many hesitations until after. Any hesitation that ever crept in was typically related to a lack of confidence in myself, not the opportunity. There are plenty of success stories out there to prove that this business can not only be successful, but life changing. Now, I’m proud to be one of those stories for others.

What I love most about being a coach is seeing people go from just living, to THRIVING.

When it comes to my success in coaching, I’m a slow and steady girl. As a true entrepreneur, I always have a few projects on my plate, so Beachbody isn’t my only “job,” but it’s the one that truly allows me to keep adding more projects because of the way it grows consistently. If I could go back and tell myself one thing when I was a brand new coach, I would say, “Go ALL in!”

I have different verses for different seasons that encourage me most, but my go-to life verse right now is,“But Jesus looked at them and said to them, ‘With men this is impossible, but with God all things are possible.’” Matthew 19:26

What I enjoy most about being a part of Michelle’s Team Iron family specifically is the constant support from so many like-minded coaches. Coaching has brought me so many amazing friendships that I never expected! The thing that stands out most to me that I have learned from Michelle is this:

Be who I am and be bold about it.

A little bit about my personal fitness journey:

I own a group fitness studio so my current workouts consist of whatever I’m teaching that day. I love strength training, but keep a good mix of cardio in there, too. My favorite Beachbody work out is too hard to choose! I like to mix it up, so Beachbody on Demand works perfectly for me!

My entire family and I drink Shakeology daily and have it at all different times depending on our schedule. I just don’t understand why someone wouldn’t love it? It makes me feel amazing, it’s SO handy – let’s be real, healthy food is NEVER handy – and it tastes like a chocolate milkshake…worth every dime!

I love to motivate others, so most of my “work” consists of what I love to do. Look around you, friend. Find things that fill you with joy, and take on the day full force with Jesus leading the way.

Honey Roasted Cinnamon Sweet Potatoes

This sweet potato delicacy has become a family favorite because of its taste and simplicity. When you can just throw a few ingredients in a bowl and have it turn out as yummy as this recipe from Dashing Dish, it’s an easy choice for us! These honey roasted sweet potatoes usually get their debut as a sweet dinner side to go with fish, chicken, or steak. James and the boys love them as much as I do, so it’s a win for everybody! (Leftovers have also been known to be a perfect pair to scrambled eggs the next morning.)

I love to save any time meal prepping that I can, so I buy the packaged, cubed sweet potatoes from the store to cut out one more step. Since the ingredients only call for 2 sweet potatoes to serve 4 people, we often like to use the leftovers for breakfast the next morning as a perfect pair with scramble eggs. I hope you enjoy this fall treat as much as we have!

What you will need:

  • 2 large Sweet potatoes, peeled and cut into 1/2-1 inch cubes
  • 1/4 cup Honey
  • 1 tsp. Cinnamon
  • 1/2 tsp. Himalayan Salt

Instructions:

  1. Preheat oven to 375 degrees. Line a large rimmed baking sheet with foil and spray with cooking spray.
  2. Place cubed sweet potatoes, honey, cinnamon, salt, and sweetener into a medium bowl and toss until the potatoes are evenly coated. Then, spread the potatoes out evenly on the baking sheet.
  3. Roast in preheated oven for 30-40 minutes, stirring halfway through cooking. You’ll know your sweet potatoes are ready when they turn gold brown and are tender enough to pierce with a fork. Enjoy!
